Nick’s Texas Pickles is the brainchild of Nick Nolte — a Navy veteran, proud Texan, and lifelong lover of bold flavors. Born in San Antonio and raised in Harlingen, Nick grew up with the spice of the Rio Grande Valley, the soul of Central Texas, and the charm of East Texas in his veins. After years of making pickles for friends and family, he finally took their advice and turned his hobby into a real-dill business in early 2025.

What started as weekend experiments in the kitchen became full-blown obsession. Today, every jar of Nick’s Texas Pickles is still made and hand-packed in Austin, Texas — no shortcuts, no nonsense. Each flavor is inspired by Nick’s Texas roots, with colorful characters and bold blends that tip their hat to small towns, smoky grills, and a state that never does anything halfway.

If you taste a little adventure in every bite, that’s because it’s there. These pickles were born on the road, seasoned by stories, and brined with pride.
